How do you get from a new machine to a shot worth drinking?
Set the grinder so an 18 g dose yields
36 g in 25 to 30 seconds,
and change nothing but the grind until the time lands. Faster than that means grind finer;
slower means grind coarser. Once the time is stable, taste. Sour and thin is under-extracted,
so grind finer again or raise the temperature. Bitter and drying is over-extracted, so grind
coarser or lower it. One variable at a time, every time.

What kills home espresso machines?
Scale, not use. Calcium and magnesium in tap water deposit inside the boiler and on the
heating element every time water is heated, insulating the element and restricting flow. The
commonly cited target is roughly 50 to 100 ppm total
hardness as CaCO3 with alkalinity near 40 ppm. Test yours
with the water hardness calculator,
and if it reads above about 120 ppm, treat the water rather
