Grind size is the average particle diameter of ground coffee, measured in microns. Notice how narrow espresso is. The gap between 200 and 400 microns is 200 microns wide, while pourover spans 400 and French press to cold brew spans 500. Espresso is not merely finer, it is a smaller target, and on most grinders that entire target fits inside a fraction of one turn of the adjustment. That is the physical reason a grinder sold for filter brewing feels impossible when you point it at a portafilter: its steps are sized for a target ten times wider.
Why are grinder settings not transferable between models?
A grind setting number is a position on one specific machine, not a unit of measurement. Three things make the same number mean different sizes on different grinders.
First, burr geometry. A 64 mm flat burr, a 48 mm conical burr and a 40 mm stainless conical burr cut coffee differently at the same gap, because the tooth pattern, the cutting angle and the distance a particle travels before it exits the burr set all differ. Two grinders set to the same physical gap will not produce the same distribution.

Third, the thread pitch of the adjustment. How does particle distribution matter as much as size?
A grinder does not produce one size, it produces a distribution around an average. Two grinders can share the same average particle size and taste completely different, because one produces a narrow band around that average and the other produces a wide spread of very fine dust and large boulders.
Fines are the particles far below the target size. They extract almost instantly and they migrate through the coffee bed, collecting at the bottom of the puck and restricting flow. A small quantity of fines contributes body and crema. A large quantity produces bitterness and unpredictable flow, which is exactly what a blade grinder or a worn burr set delivers. Boulders are the oversized particles. They barely extract at all in 27 seconds, so they contribute sourness and waste dose.

Why does the same setting drift over time?
Burrs wear. Steel burrs in a home grinder typically stay consistent for hundreds of kilograms of coffee, but the fine end drifts first, because a worn cutting edge tears rather than shears and produces more fines at the same gap. If your espresso setting has crept steadily coarser over two years to keep the same shot time, that is wear rather than imagination.
Retained grounds move the setting too. A grinder holding several grams of old coffee in its chute delivers a mixture of yesterday's grind and today's, so the first shot after a change is never a clean test.
